Equipment: The Ultimate Skillet

Pita Chips Ingredients

6 pita breads or flatbreads

¼ cup of good quality extra virgin olive oil

2 tbsp homemade dukkah

Pumpkin Seed Dukkah Ingredients

4 tbsp pumpkin seeds

2 tbsp nigella seeds

2 tbsp sesame seeds

2 tbsp cumin seeds

2 tbsp coriander seeds

1 tbsp black or white peppercorns

1 tsp flaky sea salt

Preparation

Preheat the oven to 375℉ (190℃).

Using a pizza slicer or good bread knife, cut your pita into triangles. In a large bowl, using your hands, toss the olive oil, dukkah and pita triangles together, massaging each piece with the spiced oil.

Arrange the pita triangles on a large piece of Kana Parchment Paper on a baking tray. Bake in the oven for 8-10 minutes or until the pita chips become golden around the edges. You want the edges to be crispy but the centre of each chip to still be a bit chewy.

Remove from the oven and allow to cool. Serve with some hummus topped with fresh herbs and a drizzle of olive oil.

Pumpkin Seed Dukkah

Gently warm up your Kana Ultimate Skillet to a medium heat and toast the pumpkin seeds for 1 minute.

Add the remaining ingredients except for the salt. Toast for another 1-2 minutes, constantly stirring or shaking the pan, until the seeds become fragrant.

Remove from heat and, using a spice mill, coffee grinder or mortar and pestle, grind to a powder. Stir in the salt. Store in an airtight container in a cool dry place.
